and the macaron experemting goes on..
Za’atr macarons with za’atar creamcheese.. The actualy shell of the macarons was sweet but the filling and the tangy taste of za’atar made it somewhat savory which I loved .. makes me want to make more savory inspired macarons

Black and white chocolate cheesecake bars (recipe)

Black and white chocolate cheesecake bars

For the base

250g unsalted butter

420g caster sugar

2 eggs

380g plain flour

60g cocoa powder

1 tsp baking soda

½ tsp salt

for topping

80g white chocolate chips /chunks

300g full fat creamcheese

60g icing sugar

1 large egg

one 23x30 cm baking tray

method

using an electric mixer with paddle attachment, cream together the butter and sugar until fluffy.

Add the eggs one egg at a time mixing well after each addition making sure they are well incorporated

Sift together the flour, baking soda, salt, and cocoa powder

Add the dry ingredients to the eggs butter sugar mixture in two batches mix well making sure all the ingredents are well incorporated

Cut off ¼ of the mix and cover with cling film, place in fridge

Press the remaining dough into the baking tray and allow to chill in the fridge for 20 minutes

Preheat the oven to 170c

Remove the base from the fridge and bake for 20 minutes. Allow to cool completely before adding the topping but the keep the oven on for cooking the cheesecake

Melth the chocolate in a glass bowl over a saucepan of simmering water

Using an electric whisk mix the cream cheese and sugar until smooth

Add the egg and mix then stir in the melted chocolate into the cheesecake mixture but hand

Spread the cheesecake mixture on the cooled base crumble the remaining chocoalte dough over the cheesecake mixture in large chunks

Bake for 25 mnutes until the cheesecake is set

Cool completely then place in the fridge for few hours to set

Once set cut the cheesecake into squares and serve

It has been almost a 1 year and 2 months of macaron making with lots of ups and downs, cracked macarons, macarons that ended up bubbling and feetless macarons.  In the past year I have made over 1000 macarons .. I can’t believe it myself. Varying from normal flavors like: Vanilla, Chocolate, and coffee, to macarons with an Emirati flare like; cardamom and saffron, Arabic Coffee and Rose Water and flavors inspired from other desserts like redvelvet macarons, strawberry macarons. Now that I have almost mastered macaron making, I’m more confident in making daring flavors .. the black one in the picture are nigella seeds macarons .. It has a very strong kick and is spicy, very interesting taste and flavor. Its definitely something different than the usual. Who knows what will be next, I have many different ideas and combination lingering across my head.

Strawberry cheesecake macarons .. this was a special request by a VanillaSukkar costumer .. they wanted something with strawberry so I made up these little delightful treats. A strawberry macaron shell filled with cheesecake filling : creamcheese whipped cream - graham crackers and slices of fresh strawberry .. I loved it so much I have decided to add it to VS’s menu

Sourcream pancakes recipe

Sourcream pancakes recipe

1+ 1/2 cup sifted flour

2 tsp baking powder

3 tbsp sugar

1 tsp salt

1/2 cup sourcream

3/4 cups milk

2 large eggs

1 tsp vanilla extract/ essence

1 tbsp butter

sift together flour, salt, baking powder in a bowl, stir in sugar

in another bowl mix the sourcream, milk, eggs and vanilla

mix the dry ingredients with the wet ingredients until just combined do not over mix

in a skilit over medium heat melt 1 tbsp of butter

and pour in almost 1/4 cup of the pancake patter cook until it starts bubbling once it bubbles it means that its ready to be flipped on the other side repeat the process until your out of batter

cook until golden brown

serve warm with your choice of toppings

possible toppings: chopped fruits, berries, chocolate sauce, nutella, chocolate chips, honey, maple syrup
