Finding these recipes took some research. I have made lactose free cupcakes before but not eggs free.
I made these cupcakes for my mother’s co-worker who leads an eggs free life for religious reasons I guess he is hindu.
I decided to try two different recipes one that substituted the eggs with yogurt and milk and the other that substituted the eggs with butter milk .. The chocolate cupcakes original recipe calls for 6 tbsp of coffee .. I left that part out and still got yummy moist cupcakes
My verdict: you cant really tell that they are eggless the consistency of the cupcakes was moist and fluffy.
I frosted the cupcake with fluffy vanilla buttercream / milk chocolate shavings and raspberries and some with chocolate ganache and strawberry slices
